FHE COOKIE ICE CREAM SANDWICHES

Need a Family Home Evening treat? Here’s a fast, easy one – if you’ve got ice cream and some basic cookie ingredients, you can make these!

Oatmeal Chocolate Chip Cookies: 

1 cup melted butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla

Cream together. Then add:

2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/3 tsp salt

Mix.  Then add:

2 cups quick oats
2 cups milk chocolate chips (or semi-sweet)

Place blobs of dough on greased cookie sheet. Bake in preheated to 350 degrees oven for 10-11 minutes. Let set for a few minutes before removing from pan.

After cool, place a scoop of vanilla ice cream between two cookies and *enjoy!

*I did!…..Right after I took this photo…for you. Because, really?! Was I going to actually disassemble this and put the ice cream back? NOT. A. CHANCE! (and yes, that’s a squashed muffin liner – because that’s the best presentation I could come up with in a pinch. And no, I don’t serve my family their desserts like this. They’re lucky if they get a plate! Mostly because they would simply never wait for this silliness.)

One of my favourite talks at October 2015 General Conference was this one by Elder Russell M. Nelson. It inspired me to be better with Family Prayer, Scripture Study and Family Home Evenings and that as a mother, I must be solid.

“…let me add that we need women who know how to make important things happen by their faith and who are courageous defenders of morality and families in a sin-sick world. We need women who are devoted to shepherding God’s children along the covenant path toward exhalation; women who know how to receive personal revelation, who understand the power and peace of the temple endowment; women who know how to call upon the powers of heaven to protect and strengthen children and families; women who teach fearlessly.” – Russell M. Nelson

I know at our house, daddy isn’t always home and it’s tough to gather the family, especially when teenagers and children have activities. We are BUSY. But, we are working towards regular family times and if they don’t happen, we find SNIPPITS of time for teaching. The trick is to keep trying! I love being a mom 🙂
